Our capocollo is aged for a minimum of 120 days and up to 180 days. From the first slice it offers a magnificent marbled look, with an intense red color and pure white veins, always visibile in healthy and high quality meats.
Our capocollo is able to prolong its persistence on the palate, thanks to a slight note of smoke that characterizes it but without forcing its taste.
